Gajar Ka Halwa-Traditional Treasure

Winters arrive and who's not excited about all winter delicacies. After all we have those recipes in kitty to cherish for our sweet tooth. Carrots are one of those veggies available in markets in winters.So here I am with our very own Gajar Ka Halwa



This is the traditional way of making Gajar ka Halwa. The last time I remember having Gajar Halwa was when my then boyfriend now husband brought for me, all made by himself, with his devine love melted in khoya. We often tend to avoid this delicacy as it is full of calorie laden ingredients like khoya, ghee and dried fruits. The ones keeping a watch on their calories may leave right here..bwahahaha..don't blame me ;)

INGREDIENTS








Grated Carrots-2 Cup
Milk - 2 Cups
Sugar - 1 Cup
Grated Mava (khoya) - 1/2 cup
Chopped Almonds (badam) - 1Tbsp.
Raisins (kismis) - 1 Tbsp
Cardamom (elaichi) powder - 1/2 Tsp
Ghee - 1/4 Cup


PROCEDURE





1. In a large pan, cook the carrots in milk till they are soft



2. Add the sugar and khoya and mix well.Keep stiring.This is a real job




3. Cook till the mixture leaves the sides of the pan, adding ghee a little at a time till the halwa smells fragrant.




4. Gradually the mixture starts thickening. Keep stiring making sure the mixture doesn't burn or stick to the bottom of the pan




5.Add the almonds, raisins and cardamom powder and mix well.

Serve hot.
