Bell Pepper Omelette Flowers

When I was thinking about something creative for my breakfast, I never thought this would be yummy and equally beautiful.
For how many times have you mixed all those vegetables with eggs and splash them over for an omelette. I have. Many times. Then I thought about this creative fundoo idea, and the outcome was fabulous. Appreciated by my husband too.
A bulls eye omelette in bell pepper slices looked so beautiful and who wouldn't like to break the breakfast monotony. I try these as evening snacks with tea as well.

THINGS YOU NEED

Big bell peppers/capsicums : 2 nos.
Eggs: 2 nos.
Vegetable Oil
Salt, pepper, oregano, chilly flakes to sprinkle

PROCEDURE

1. Heat a non stick pan and spread a teaspoon oil over it.

2. Cut 1" thick slices of each bell pepper/capsicum, and place on the heated pan, cooked for 1 minute and flip them with a wooden spatula.



3. Break and pour each egg in each slice without breaking the yolks.


4. Sprinkle the seasonings-salt, pepper, oregano and chilly flakes immediately and close with a lid.

5. Let it cook for 1 minute (as the egg layer is an inch thick, it takes time to cook it thoroughly)

6. Remove carefully and enjoy with your favorite sauces
